Peel and cut up potatoes and cook until tender - drain and mash very thoroughly, add butter, pepper and egg and beat until light and fluffy. Drop by tablespoon into deep hot fat (375-390 degrees) and fry golden brown. (Dipping spoon into oil keeps mixture from sticking to spoon). Drain and serve. Serves 4.
