121: Stuffed Artichokes (6); Source: Aunt Dot

Artichokes6 loaves of stale bread or 3 1/2 cups bread crumbs2
garlic4cloves olive oilas needed to moistened
parsley (fresh)1/4cup parmesan cheese1cup
american cheese3/4cup hard boiled eggs3
salt1tsp pepper1/2tsp

Directions:
Grate bread and cheeses. Add salt & pepper. Add chopped eggs. Chop parsley and garlic then add to mixture.
Wash artichoke- cut top & bottom off. Drain and then stuff. Place in enough water in bottom of pan to barely cover bottom of artichokes. Top with olive oil generously. Cover pot and cook till tender or when a leaf is pulled comes out easily. Enjoy.
Sometimes I will add a cup of crabmeat to mixture to stuff.
