124: Low Carb Chicken Florentine; Source: E-Cookbooks

fresh spinach(washed & stems removed1/2lb butter4tbs
large onion(cut into rings)1 sliced mushrooms6oz
dry white wine1/3cup soy flour1tbs
sour cream1cup garlic powder1pinch
sharp cheddar cheese (grated)4oz boneless skinless chicken breast half2

Directions:
Steam spinach until wilted: drain & chop
Melt 2 tbs of butter in large skillet & saut? onions until golden. Remove onions with slotted spoon, mix with spinach & place in buttered casserole. Add 1 tbs butter to skillet. Brown chicken & remove to warm plate. Saut?' mushrooms in remaining butter & remove to plate with chicken. Add wine to pan & then stir in flour. Slowly add sour cream & stir until hot & thickened. Add chicken, mushrooms, & garlic powder. Place on spinach, sprinkle with cheese and bake uncovered at 350 degrees for 20 to 30 minutes.
