Jalape?o-Corn Grits<br />Tip: Wear gloves when chopping jalape?o peppers to avoid burning your fingers!<br /><br />1 t Butter<br />1 t Jalape?o pepper, small diced <br />? C Fresh corn, cut from the cob (about 1 small ear)<br />? C Onion, small diced<br />? C White or yellow grits<br />1 ? C Water<br />1 t Fresh thyme, picked<br />Kosher salt to taste<br /><br />Melt butter in a medium-size saucepot. Saut? jalape?o peppers, corn and onion until tender. Stir in grits, then add water and continue stirring. Cook over medium heat until grits have absorbed all of the water. Stir grits constantly to prevent lumps from forming. Stir in thyme and adjust seasoning with salt to taste.
