Directions:
Saut? garlic and onions till done. Add cooked spinach and fold in cream cheese
Beat eggs, cream, cheddar cheese, and green onions
Greased 8X8 pan - spread the spinach and cream cheese on bottom
Add egg mixture and top with parmesan cheese
Bake in pre-heated oven for 30 minutes and check with knife
variations
sprinkle tasso or crumbles bacon on top
mix in saut?ed crawfish, cool and add to eggs, then make crawfish cream sauce for topping
