LEMON SQUARES
Make crust: Heat oven to 350?. In medium bowl, beat the butter and sugar with a wooden spoon until creamy. Gradually stir in the flour. Press evenly into the bottom of an ungreased 9-inch square baking pan. Bake until golden (20-25 minutes.)
Make filling: In a medium bowl, whisk together eggs, sugar, lemon juice, flour, lemon peel and baking powder and pour over the hot crust. Bake at 350? until set (12-15 minutes). Cool completely. Just before serving, sift confectioners? sugar over top. Makes 16 squares.
