makes 4 small pizza crusts

flour (375g)2 - 2.5cups water (225g)3/4cup
yeast (4g)2tsp sugar (7g)1tsp
salt (9g)1/2tsp oil (20g)1tbl
oregano1tbl garlic, granulated1tbl
pizza quick sauce (2 cubes)2tbls mozzarella cheese 1/4cup
pepperonis12ea

Directions:
add warm water (110 degrees) yeast and sugar to bowl and let bloom for 5 minutes

add flour, garlic powder, oregano to mixing bowl with bloomed yeast solution and mix on low for 5 minutes or until dough ball forms and separates from sides of bowl

take out and kneed for a couple of minutes and put back into bowl coated with oil and let rise for 1 hour.

cut into 4 dough balls and cover in plastic wrap and refrigerate until needed.

make pizza crust
spread 2 tbls pizza quick sauce
place mozzarella cheese and then pepperonis

back at 500 degrees for about 8 minutes


400g crushed tomatoes
25g tomato paste
3g salt
5g sugar
1/4 tsp oregano
1/4 tsp basil
1 clove garlic

brown garlic in oil, add tomatoes and simmer for 15 mins
