makes 4 small pizza crusts
flour (375g) | 2 - 2.5 | cups | | water (245g) | 3/4 | cup | yeast (4g) | 2 | tsp | | sugar (7g) | 1 | tsp |

oregano | 1 | tbl | | garlic, granulated | 1 | tbl |
pizza quick sauce (2 cubes) | 2 | tbls | | mozzarella cheese | 1/4 | cup |
pepperonis | 12 | ea | |
Directions:
add warm water (110 degrees) yeast and sugar to bowl and let bloom for 5 minutes
add flour, garlic powder, oregano to mixing bowl with bloomed yeast solution and mix on low for 5 minutes or until dough ball forms and separates from sides of bowl
take out and kneed for a couple of minutes and put back into bowl coated with oil and let rise for 1 hour.
cut into 4 dough balls and cover in plastic wrap and refrigerate until needed.
make pizza crust
spread 2 tbls pizza quick sauce
place mozzarella cheese and then pepperonis
back at 500 degrees for about 8 minutes
400g crushed tomatoes
25g tomato paste
3g salt
5g sugar
1/4 tsp oregano
1/4 tsp basil
1 clove garlic
brown garlic in oil, add tomatoes and simmer for 15 mins
