25: BATTER FRIED SHRIMP; Source: Bill Huber

large shrimp1lb flour1/2 cup
baking powder1/2 tbs sugar1tbs
milk1/2 cup salt & pepperto taste
butter1tbs

Directions:
BATTER FRIED SHRIMP

Wash and peel shrimp, leaving last section and tail in tact.

To make batter, in bowl mix flour, baking powder, sugar and salt.
Stir in eggs, melted butter and milk. Beat lightly.

Dip shrimp in batter, one at a time, holding by tail. Fry in deep fat fryer at 375? until golden brown.

This batter can also be used for oysters, fish and crawfish.
