Directions:
preheat oven to 325. grease shallow 3 quart ceramic casserole. combing water, butter, salt, and 1.5 cups milk - heat to boiling over medium-high heat stir in grits and simmer 5 minutes. then stir in cheese.
in bowl, whisk eggs, hot sauce, and 2 cups milk. gradually whisk in grits to blend.
pour grits into casserole - bake 45-50 minutes
