253: Apple Butter; Source: Heather Woody

apples4lbs apple cider vinegar1cup
clove0.5tsp lemon juice and zest1ea
water2cup sugar4cup
allspice0.5tsp cinnamon (to taste)2taste

Directions:
Cut apples into quarters
Put into pot with water and vinegar and bring to a boil
Reduce heat and simmer until soft (about 20 minutes)
Mash apples though strainer (or food mill)
Measure pulp and add 1/2 c. sugar to each cup of pulp
Stir until sugar is dissolved
Add a dash of salt, seasonings and lemon
Cook uncovered on medium low stirring constantly until thickens
