apples | 4 | lbs | | apple cider vinegar | 1 | cup | clove | 0.5 | tsp | | lemon juice and zest | 1 | ea |
water | 2 | cup | | sugar | 4 | cup |
allspice | 0.5 | tsp | | cinnamon (to taste) | 2 | taste |

Directions:
Cut apples into quarters
Put into pot with water and vinegar and bring to a boil
Reduce heat and simmer until soft (about 20 minutes)
Mash apples though strainer (or food mill)
Measure pulp and add 1/2 c. sugar to each cup of pulp
Stir until sugar is dissolved
Add a dash of salt, seasonings and lemon
Cook uncovered on medium low stirring constantly until thickens
