Directions:
Chop parsley fine. Combine and mix all ingredients in glass bowl except for oil, spinach, eggs, and bacon. Then drizzle in the oil while beating the mixture with a whisk to emulsify the dressing.
Hard boil eggs and fry bacon
Toss spinach with dressing about 10 minutes before serving. Toss in bacon and eggs just before serving,
